  4. I realize that spices are subjective, but I'm surprised surprised you used so few spices.

    In addition to salt, nutmeg, pepper, bayleaf, clove, I would have added 1/2 teaspoon fennel seeds, 1/2 teaspoon red pepper flakes, 1 teaspoon oregano, 2 teaspoons basil, 1 teaspoon sage, 2 cloves garlic, 2 teaspoons of parsley.

    Anyway, nice job on the béchamel sauce, which was gorgeous!
