GORDON RAMSAY: I’m going
to show you how to prepare sausage made from scratch. I’m doing a pork sausage,
70% ground pork with 30% fat. The fat in the
sausage is crucial. No fat, dry. Too much fat, greasy. From there, seasoning. Pepper, salt, and
then your slices. Onion powder, fennel
seeds, garlic powder, and then smoked paprika. Now combine your ingredients. Do not overwork that mix. Grinder. Casing on, pull down. Take your mix. Very carefully, get it
through your grinder. Hand down and push. And see, it’s just
starting to come through. Now get a great
length, and then twist. Sausage number two. Through. Second one done, same size. Pull and twist. Now let’s do three, shall we? Make sure to get that
nice even distribution. Push through. Make sure there’s
no air in there. Any air in there, and you’re
going to burst the casing. Pull and twist. Cut that. Tie it. And that is how
you make sausages like a true Master Chef.

  1. We don't overmix it the sausage. Also when we make burger too. Why we don't overmix it? Or what happened if we overmix it?
